Ingredients
The Fish: 2 fillets of white fish (approx. 150g each).
The Aromatics: 1 tbsp extra virgin olive oil, 1 clove garlic (minced), and 1 tsp dried oregano.
The Citrus: ½ lemon (sliced into rounds) and the other half for juicing.
Seasoning: A pinch of sea salt and cracked black pepper.
Optional: A small handful of cherry tomatoes or thin asparagus spears to bake alongside.
Preparation
Prep: Preheat your oven to 200°C (400°F). Line a baking dish with parchment paper.
Season: Pat the fillets dry. Rub both sides with the olive oil, minced garlic, oregano, salt, and pepper.
Layer: Place the fish in the dish. Arrange the lemon slices directly on top of the fillets. If you are using tomatoes or asparagus, tuck them around the sides of the fish.
Bake: Place in the oven and bake for 10–12 minutes. White fish cooks quickly; it is done when the flesh is opaque and flakes easily with a fork.
Serve: Squeeze the remaining lemon juice over the fish just before serving to brighten the flavors.
Variations
The Pesto Bake: Skip the garlic and oregano and simply spread 1 tsp of basil pesto over each fillet before baking.
The Japanese-Style: Use a dash of soy sauce, grated ginger, and a drop of sesame oil instead of the Mediterranean herbs.
The Mediterranean Crunch: Sprinkle a tablespoon of sliced almonds or pine nuts over the fish for the last 3 minutes of baking for a satisfying texture.
