    • 1 cup broccoli florets

    • 1 red onion (cut into wedges)

    • 1 cup cherry tomatoes (left whole)

  • Aromatics: 2 cloves garlic (smashed) and 1 tsp dried herbs (oregano, thyme, or rosemary).

  • Seasoning: A generous pinch of sea salt and cracked black pepper.

Preparation

  • High Heat: Preheat your oven to 200°C (400°F). A hot oven is essential for roasting; if the temperature is too low, the vegetables will simply steam and become soft.

  • Toss and Coat: In a large bowl, combine all the vegetables with the olive oil, herbs, salt, and pepper. Use your hands or a large spoon to ensure every piece is evenly glistening with oil.

  • The Space Rule: Spread the vegetables onto a large baking sheet. Crucially, do not overcrowd them. If they are touching too much, they will release steam and lose that signature roasted "char." Use two pans if necessary.

  • The Roast: Place in the oven for 25–30 minutes. At the 15-minute mark, give the pan a good shake or toss the vegetables with a spatula.

  • The Finish: You’ll know they are done when the edges are browned and the cherry tomatoes have just started to "burst."
