Ingredients

  • The Base: 4–5 cups of fresh spring mix greens.

  • The Crunch: 1 Persian cucumber (thinly sliced) and ¼ cup toasted pumpkin seeds (pepitas) or slivered almonds.

  • The Sweet & Tart: ½ cup halved cherry tomatoes or thinly sliced radishes.

  • The Creaminess: ¼ cup crumbled goat cheese or half an avocado, sliced.

  • The Vinaigrette: 3 tbsp extra virgin olive oil, 1 tbsp fresh lemon juice (or apple cider vinegar), ½ tsp Dijon mustard, and a pinch of sea salt and black pepper.

Preparation

  • Prep the Greens: If the spring mix isn't pre-washed, rinse it in cold water and use a salad spinner to dry it thoroughly. Wet leaves will prevent the dressing from sticking.

  • Make the Dressing: In a small jar, combine the olive oil, lemon juice, mustard, salt, and pepper. Shake vigorously until the dressing is emulsified and slightly creamy.

  • Toss Gently: Place the greens in a large wooden bowl. Add the cucumbers and tomatoes. Drizzle about half the dressing over the top and toss very gently with your hands or large spoons to avoid bruising the delicate leaves.

  • Layer the Toppings: Add the goat cheese (or avocado) and the toasted seeds last. Drizzle a tiny bit more dressing over these final components just before serving.
