Ingredients
The Steak & Marinade
Beef: 450g Sirloin or Flank steak (lean cuts work best here)
Marinade: 1 tbsp soy sauce (or tamari for gluten-free), 1 tsp lime juice, and a pinch of black pepper.
The Dressing
Lime Juice: 3 tbsp fresh lime juice
Fish Sauce: 2 tbsp (this provides the essential salty/umami depth)
Sweetener: 1 tsp coconut sugar or honey
Heat: 1 tsp red chili flakes or 1 finely chopped bird’s eye chili (adjust to your preference)
The Salad Base
Greens: 4 cups mixed greens or thinly sliced Napa cabbage
Aromatics: ½ red onion (thinly sliced), 1 cup cherry tomatoes (halved), and 1 Persian cucumber (sliced)
Fresh Herbs: ½ cup fresh cilantro and ½ cup fresh mint leaves
Preparation
Marinate & Grill: Rub the steak with the marinade and let it sit for at least 15 minutes. Grill or pan-sear the steak over high heat for 3–4 minutes per side (medium-rare is ideal for this salad). Let the steak rest for 10 minutes before slicing thinly against the grain.
Whisk the Dressing: In a small bowl, whisk together the lime juice, fish sauce, sweetener, and chili. Taste it—it should be bright and punchy.
Assemble: In a large bowl, toss the mixed greens, onion, tomatoes, and cucumber.
Combine: Add the sliced steak and its resting juices to the bowl. Pour the dressing over the top and gently fold in the mint and cilantro.
Serve: Plate the salad immediately while the steak is still slightly warm.
